mjp28
Today we had tilapia steam cooked in the microwave in a dish with a lid designed for this. The tilapia came out fork tender and was really good for a whitefish meal. We had a spinach salad I had French dressing plus olives, artichokes and crackers for an appetizer and french style green 💚 beans also asparagus as sides for the 🐟 lunch. AND the tilapia was on sale at Aldi's for about $5.79/lb we had about a half pound each....... really good and good price nice lunch today. 1

mjp28
Today is a beautiful cookout weather day so we're having cheese 🧀 burgers on the grill with tater tots in the oven and a salad and/or a green 💚 vegetable like asparagus, spinach or french style green beans. I'm basically on a high protein diet with good healthy so this lunch is good -and- delicious. All of those canned vegetables are from Amazon pantry delivered to your at a good price. I generally get 12 packs of the veggies for a price and convenience. My wife was at Walmart and got a package of their PRIME RIB STEAK HOUSE BURGERS a package of 4 is 1.33 lb or 0.42 lb each for $9.11 or $2.25 each. They didn't have a meat mix (like 80/20, etc) so it looks like all ground prime rib meat mix, 380 calories each. So you're looking at a 500-570 calorie cheeseburger 🍔 for a key part of a 2,000 calorie diet. And a definite GAMEDAY meal. You just have to watch the chips, dip and other munchies instead load your cheeseburger with lettuce, tomato, onion or any of your other favorite toppings. Mmmm-mmmm sounds good mine is a burger with Deluxe American or maybe Cheddar cheese with mustard, mayonnaise, lettuce, red onion........ and burgers hit the grill at 2 pm this afternoon ! mjp28
We have two burger 🍔 patties left from the ^^^^^ above Walmart PRIME RIB STEAK HOUSE BURGERS and we are going to have them today. (see above post for details). Yesterday's burgers we both found were good but maybe lacking the PRIME RIB buildup. In any case we've had better hamburger patties from Aldi's for less and were really tastier and juicer...... but you hate to judge on just one test. The condiments and side dishes carried the meal out. It often does. Tonight we both are having Vadellia onions on our burgers her's grilled and mine a big raw sliced Sweet Vadialla, salted with mustard and mayonnaise on a toasted bun. Dinner is at 6:30:pm with the usual appetizers and other stuff....... can't wait to dig in ! .......... edit add, optional grill time decision for any tomato 🍅 or any other adds ! mjp28
Our GOOD OL' TUNA NOODLE CASSEROLE a favorite old recipe that is easy to make and delicious for any meal even before GAMEDAY. We might cook up some sausage 🌭 on the grill and have a casserole for a get-together. And see more links below. SERVES. 6. COOK TIME. 30. MINUTES Our Good Ol' Tuna Noodle Casserole is a comforting classic that first become popular in the 1950s. Our version has the same mouthwatering flavors, but we've added a few shortcuts, so that you have more time to spend with the family. This tuna noodle casserole has a nostalgic feel, and you might just find all those childhood memories coming to join you at the table. What You'll Need to have......oh we have a few tweaks to this classic recipe. My wife adds some chopped celery, optional. 1 (12-ounce) package wide egg noodles 2 (10-3/4-ounce) cans cream of mushroom soup 1 1/2 cups milk 1 (12-ounce) can solid tuna in water, drained and flaked 1 cup shredded Swiss cheese....... we don't use cheese just add mayonnaise, optional. 1 (13-ounce) package frozen peas 2 tablespoons butter, melted 1/2 teaspoon salt 1/4 teaspoon black pepper 1 cup French-fried onions.......we like to use bread crumbs also optional. What to Do Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray. Prepare noodles according to package directions; drain. In a large bowl, combine soup and milk; mix well. Add noodles, tuna, Swiss cheese, peas, butter, salt, and pepper. Pour mixture into prepared baking dish then top evenly with French-fried onions. Bake 30 to 35 minutes or until bubbly and heated through. Serve immediately. Test Kitchen Tip When it comes to the tuna, we think this is best with white solid tuna packed in water. It seems to give it the freshest taste. Yes, it’s a bit more expensive, so if you prefer, chunked in oil will work. The choice is yours. DieHardBrownsFan
Fried Catfish Crispy fried catfish fillets coated in a seasoned cornmeal crust! By HANK SHAW Updated February 05, 2021 56 Ratings 53 Comments JUMP TO RECIPE Pin Share Email Elise Bauer Fried catfish is an icon of Southern cooking: For many, there simply isn't any other way to prepare it. Arguments rage over whether it's best deep-fried, battered, breaded with cornmeal, or even just simply dredged in flour. This, to my mind, is a healthy debate. Now I love a good beer batter, and some fish are best with that simple dredge of flour. But not catfish. Catfish need breading. Cornmeal breading. There's something about a cornmeal crust that really sings with catfish. Maybe it's the combination of a truly American fish with a truly American grain. This is a simple dish, but there are a few keys to good fried catfish: Hot oil, and the right breading. If you've ever had soggy, greasy catfish, it's because the oil is too cold. You want it around 350 degrees. And use peanut oil if you can -- it adds a lot of flavor. (Lard is even better... just sayin'.) Elise Bauer For the breading, use fine, white cornmeal if you can find it. This, sadly, is not always easy outside the South. In the absence of fine, white cornmeal, use the regular stuff with a little flour. Unless it is finely ground, an all-cornmeal crust tastes gritty. As for seasoning, what we provided below is just what I like to use; you can use whatever seasoning you want, from your own concoction to Lawry's to Zatarain's, Old Bay or even just lemon pepper. Serve your catfish with whatever you want, but traditionally you'd want cole slaw and hush puppies, which, if you've never heard of them, are a fried cornmeal dumpling. Hot sauce on the side, too. SAVE IT PRINT Fried Catfish PREP TIME15 mins COOK TIME15 mins TOTAL TIME30 mins SERVINGS4 servings This frying method works with pretty much any thin fish fillet: If you can't find catfish, use tilapia, bass, flounder, walleye, perch, rockfish, croaker or black seabass. Ingredients 4 to 6 catfish fillets, about 1-2 pounds 1 cup milk or buttermilk Salt 3/4 cup fine cornmeal (do not use coarsely ground cornmeal) 1/2 cup flour 1 teaspoon garlic powder 1 teaspoon black pepper 1 teaspoon paprika 1/2 teaspoon cayenne 1/4 teaspoon celery seed Oil for frying (use peanut oil if you can) Method Heat oil in pan, heat warming oven: In a heavy frying pan (I prefer to use cast iron), pour enough oil to come 1/2 inch up the sides of the pan. Heat the pan on medium-high. Heat your oven to 200°F and lay a cookie sheet inside. Place a wire rack on top of the cookie sheet. Soak catfish in milk or buttermilk: While the oil is heating, soak the catfish in the milk or buttermilk. Mix together cornmeal, flour, spices for dredging: Mix the cornmeal, flour and spices together. (Or you can substitute your favorite seasoning instead.) Place in a shallow dish for dredging. Dredge fillets in flour mixture, then fry in hot oil: Let the oil reach 350°F — a good test is to flick a little of the dry breading into the oil, and if it sizzles at once, you're good to go. Once the oil is hot, sprinkle the catfish fillets with salt and dredge them into the breading. Shake off the excess and gently lay into the hot oil. Fry until golden brown, about 2-4 minutes, depending on how thick the fillet is. Use a metal spatula and gently turn the fish over and cook for another 2-4 minutes. Cast iron heats up and stays hot, so monitor the heat as you fry; you may need to lower the heat on the burner at some point. Keep cooked fillets warm in oven: Once the fish is ready, move it to the oven while you cook the rest of the catfish. Keeping the fried catfish warm in the oven will help keep it crispy. When they're all done, serve at once with your favorite hot sauce, cole slaw and some hush puppies. 1
